Lodge Cast Iron: The Original Green Skillet!

Lodge Cast Iron was founded by Joseph Lodge over 100 years ago and the company is still family-owned today. Located in Tennessee, this very small community makes what most consider to be the best cast iron cookware in the world.

For those of you who have tried cooking (and the rewards of tasting!) the delicious food made in a cast iron pan, you know why people treat their cast iron pans with much love. Lately, I've become particularly fond of making frittatas in my 10" cast iron skillet. I love how simple it is to put the skillet directly from the stove top into a heated broiler for the last few minutes of cooking. Here's a recipe from a favorite source, 101 cookbooks.

Cast iron is well known for its even heating, heat retention, durability and value. At the manufacturing plant, a layer of soy-based vegetable oil has been evenly applied to all surfaces of the cookware, then baked-on at extremely high temperatures to deeply penetrate the surface. This "seasoning" treatment allows for immediate use without the process of repeatedly curing the pan at home. Every time you cook in your pan, it continues to become seasoned more and more, while helping to prevent rust and creating a permanent, natural nonstick surface.

A natural non-stick surface? Seem too good to be true? Some people may wonder, well what's wrong with non-stick cookware?

PFOA, (Perfluorooctanoic Acid) also known as C8, is a man-made chemical used to make fluoro-polymers to achieve a "non-stick" coating on pans. In two to five minutes on a conventional stovetop, cookware coated with teflon and other non-stick surfaces can exceed temperatures at which the coating breaks apart and emits toxic particles and gases.

According to the Environmental Working Group (EWG), "The chemical PFOA pollutes over 95% of Americans' blood, including all 10 newborns surveyed in a study EWG commissioned in 2007. PFOA never breaks down in the environment, so every molecule of it produced since the 1950s or earlier will forever be in our air, water and bodies. In animals, PFOA causes cancer, birth defects and other health problems".
