Apple Matchstick Salad

As we continue to embrace all things fall, we're happy to give some love to the apple. It’s the season and we love hearing stories from our friends about the surplus of apples from weekend apple picking adventures and the notion of what to do with them! 

Friends, meet Erin Gleeson. She's a photographer, artist, and wonderful food blogger from the blog, The Forest Feast. Her cookbook The Forest Feast is a visual delight -- a true inspiration for local vegetarian cooking. What amazes us most is Erin's ability to reinvent simple dishes into beautifully constructed recipes that are meant to make with minimal preparation. 

Most of Erin's recipes only require a handful of ingredients, sometimes only three. They're simple, vegetarian and fresh. Flipping through the pages (each recipe is adorned with her watercolors, gorgeous photography and handwritten directions), the only problem is deciding what to make first! Erin's specialty is re-designing the classics like deviled eggs, caprese salad, and homemade pizza into artful forms. Whether hosting a cocktail party and looking to make appetizers with a wow factor or cooking a cozy dinner for friends and family, this cookbook should be within reach! You will surely slice, fill and assemble differently after learning Erin's masterful tricks.

Back to the salad...for Erin,  everything was imaginable with apples since her childhood was spent growing up in an apple orchard. Her family dried them, made apple butter and apple sauce, pies, tarts...the list was endless!  

Cutting apples into matchstick-sized pieces for a salad makes them just a little more fun to eat, don’t you think? 

Directions: 

1) Slice a few apples this way and toss them with chopped pecans (or any nuts), dried berries and raisins (Erin bought a mix at Trader Joe’s with golden raisins, blueberries and cranberries)

2) Add some fresh cilantro. 

3) Dress with a bit of olive oil, lemon and salt.
