Chocolate Chia Cookies

With the school year starting up, we find ourselves pinning all kinds of yummy, healthy snacks—homemade treats that are a fun surprise in a lunch box or as an afterschool snack. Our latest recipe comes courtesy of one of our favorite blogs, Super Healthy Kids. You’re going to love these 4-ingredient Chocolate Chia Cookies.

Ch-ch-ch-chia

Chia seeds (yes, the same ones that sprout chia pets!) are a true superfood. Rich in omega-3 fatty acids and fiber, chia seeds can help reduce inflammation and lower cholesterol. They are also a great source for antioxidants and minerals like calcium and magnesium. Unlike flaxseeds, chia seeds don’t need to be ground up in order for the body to absorb their nutritional benefits. In addition to sprinkling them into smoothies or on yogurt, we’ve been throwing them into baked treats!

Recipe

We love these simple, delicious, protein-packed cookies. Just 4 ingredients, these healthy cookies help curb your kids’ sugar cravings and tie them over after school before dinner’s ready. Plus they're gluten-free! 

Ingredients

  • 1 cup peanut butter, all-natural
  • 1 tablespoon cocoa powder, unsweetened
  • 1 tablespoon chia seeds
  • 1 large egg
  • 1 tablespoon pure maple syrup (optional)

Directions

1. Preheat the oven to 350F. Line a cookie sheet with parchment paper.

2. Add all the ingredients to a bowl and mix well.

3. Roll the cookie dough into approximately 12 golf ball sized balls and place on the cookie sheet. Flatten with a fork and bake for 10 minutes or until the edges are just starting to crisp.

4. Remove from the oven and allow the cookies to cool.

5. The cookies will keep in an airtight container for 48 hours.
