Superfood Quinoa Brownies


When we think of superfood desserts, we often turn to our friend Kelly from the Nosh+Nourish. Her goal and focus is having a nourished family and she does this by using Superfoods at Every Meal. Her cookbook focuses on these 10 superfoods: quinoa, chickpeas, kale, sweet potatoes, blueberries, eggs, honey, coconut oil, greek yogurt and walnuts. Each of her recipes incorporates at least 2 of these superfoods and are likely to satisfy even the pickiest eater!

Ingredients

1 cup
Cooked Quinoa 
1⁄4 cup
Rolled Oats
1⁄2 cup
Whole Wheat Pastry Flour
1 teaspoon
Baking Powder
1 teaspoon
Maple Syrup
2⁄3 cups
Coconut Sugar
3 tablespoons
Vegan Butter OR unsalted butter
1⁄2 cup
Sweet Potato (peeled and cubed)
1⁄3 cup
Chocolate Almond or Cashew Milk 
2 tablespoons
Cocoa Powder
4 tablespoons
Ground Flax


Instructions

  1. Preheat oven to 375 degrees.

1. Cook the sweet potato - either over the stovetop or in the microwave (if doing in the microwave, add 1/3 cup water and microwave for 4 minutes and drain). 

2. Add almond milk to the cooked sweet potato, and then puree with an immersion blender.

3. Add all ingredients into a medium mixing bowl.

4. Grease an 11x7 brownie pan with coconut oil or butter.

5. Pour in brownie batter and bake for 25 minutes, or until a toothpick comes out clean.

Yield: 12 brownies. ENJOY!
