Blueberry Cobbler

EASY HOMEMADE BLUEBERRY COBBLER

1st step: Combine blueberries, juice and zest of 1 lemon, vanilla bean and sugar. Place in a 2 quart baking pan.

Step 2: Make and divide up the biscuit dough into 8 even sections and drop on the blueberries.

Drizzle the biscuit dough with a bit of cream and sprinkle with a little turbinado sugar. Bake in a preheated oven at 400 degrees for 20-25 minutes.

Ingredients for fruit mixture

  • 3 cups of blueberries
  • 1/2 cup of sugar
  • 1 vanilla bean scraped
  • Juice and zest of 1 lemon
  • 1 TBSP cornstarch

Ingredients/Directions for biscuits: combine dry ingredients and form a well. Whisk wet ingredients together and pour into dry mixture to stir soft and sticky dough.

  • 1 cup flour
  • 1/2 cup cornmeal
  • 3 TBSP sugar
  • 2 tsp baking powder
  • 1/4 tsp of baking soda
  • 1/4 tsp salt
  • 5 TBSP of unsalted butter, melted
  • 1/2 cup buttermilk
  • 1/2 tsp of vanilla extract
  • 2 TBSP of heavy cream 
  • 1 TBSP of turbinado sugar
