Healthy Creamsicles

When the mercury rises we like to chill out with ice pops. It's fun to play with different combos: Pineapple Mint, Strawberry Lemonade, even boozy and caffeinated ones. Plus making your own gives you control over what goes in your pops - no sugar, artificial colors or additives.

Melissa King from My Whole Food Life has a knack for making healthy food that’s delicious, and she has a particular passion for creating healthy homemade versions of unhealthy snacks. We challenged her to recreate the Creamsicle, that cold, creamy, sweet treat that brings back childhood memories!

A Secret Superfood Ingredient

“I am convinced that most kids will eat anything in popsicle form,” says Melissa. “I sneaked some sweet potatoes in these creamsicles and they have no idea!” This secret ingredient adds sweetness and color to these delicious ice pops. Melissa used our Groovy Ice Pop Molds for her Hidden Veggie Creamsicles. You could also recreate the "push-up" experience with these Silicone Ice Pop Molds.

Hidden Veggie Creamsicles

Makes 6 popsicles

Ingredients

  • 1 can full fat coconut milk
  • 2 cups oranges
  • 1 cup raw sweet potato (peeled and cubed)

Instructions

Mix all the ingredients in a blender.

Take a taste. If it’s not sweet enough for you, you can add a tablespoon or two or honey or maple syrup.

Pour into molds and freeze for at least 6 hours.
