I can honestly say that over the last several months I have become much more conscious of my carbon footprint and the potentially harmful effects of toxins to my health and the health of my family. My association with MightyNest has nudged me in that direction. I started to really learn about BPA, how toxic chemicals interact with our genes and the toll that toxins and plastics take on our environment. Did you send your child off to school or daycare this morning with a packed lunch?  If so, you probably took the time to make sure that what you prepared and included in the lunchbox was nutritional and fresh - a healthy lunch fit for your growing child.  But did you know that just 4 hours later - when your child is ready to sit down in the cafeteria - the lunch you prepared may no longer be fresh and just might leave your child susceptible to foodborne illness? (yikes!)

Researchers at the University of Texas Department of Nutritional Sciences conducted a study which found that over 90% of the food parents packed in their children's lunches wasn't being kept at a safe temperature - meaning below 39.2°F or above 140°F.  As part of this study, the surface temperature of 1,361 perishable food items was tested for safety and the results were pretty startling.  Just 22 items (1.6%) were in the safe temperature range. Read more...

I’ve been working the last year or so, at the behest of my son…who going forward shall be known as “eco kid”, to make his lunch waste-free. It’s not until you start trying that you realize how difficult that can be.

First I had to eschew any pre-wrapped snacks. That includes, unfortunately our favorite organic fruit leathers, granola bars, individual pretzel packs and even baby carrot packages. All of those things are now bought in bulk, with the exception of the fruit leather and granola bars – that I think I will have to try and make those myself one of these days.

Next to go was the omnipresent plastic sandwich and snack bags. I simply stopped buying them and started using old yogurt containers and peanut butter jars. This has its drawbacks. Rarely do they fit into a standard lunchbox.

Fortunately a whole new series of roomy lunch sacks, designed to fit odd sized containers are finally on the market. Some even include reusable containers of appropriate size. Read more...
