Our Week of Eating In
Last week the MightyNest crew all participated in the Huffington Post's Week of Eating In: 7 days and 7 nights of no eating out or carryout, all meals prepared at home. Dina shared her results yesterday in the BabySteps Blog. Here's how things went down in our house...
Breakfast: 7 out of 7. We're big oatmeal eaters, so breakfast was an easy one. Not too many restaurants open at 6am to tempt us here anyway!
Lunch: 5 out of 7. 2 of the 3 days that I was away from the house at lunchtime I forgot to pack a lunch. Well, one day i did truly forget and the other day I just couldn't quite get my act together that morning.
Dinner: 7 out of 7: I really do like to cook - especially on the weekend when I have a partner to help out with the kiddos - but sometimes my energy level at 5pm doesn't always inspire lengthy, gourmet creations. So his week I decided cook from scratch every night, and nothing from the freezer. (Meaning no gardenburgers or yummy Blake's Organic Chicken Pot Pies). This week some of our dinner menus included: roast chicken and vegetables, pork chops, homemade chicken noodle soup, spaghetti bolognese, tacos, and a really great veggie stir fry called Tree of Life Stir Fry - from my new favorite cookbook, Clean Food.
