Every parent has heard those famous words: “Can I have a snack?” As important as it is to have healthy, square meals every day, there are all those times whether it’s after school or sports practice, or simply just because, when a little somethin’ somethin’ is just fun...and tasty. And there’s no reason why just because it’s a snack, it shouldn’t be something real and real healthy.

Meet Laura

You could say Laura Fuentes, a.k.a the family meal-planning guru Momables, is an expert at developing recipes that are healthy, fun, and most importantly your kids will eat. “I grew up in Spain where fruit was the only snack option,” says Laura. Now that she’s a mom to three young kids in the United States, things are a bit different now. Laura’s figured out how to keep her little ones, happy, nourished, and excited about her snacks.

New Cookbook!

Laura spent the last year writing her new cookbook “The Best Homemade Kids’ Snacks on the Planet” and it’s finally here! Full of more than 200 real food snack ideas, kitchen tips, and prep notes, and ways to make every snack portable, the book has arrived just in time for summer. Mango Freeze Pops

“I turned my daughter’s favorite treat at the New Orleans Jazz Fest into a freeze pop. Because really, everything is better as a freeze pop, right?” -Laura Fuentes

These pops are so fun frozen in our NEW Star Ice Pop Molds!

Ingredients

  • 1 cup (235 ml) coconut milk
  • 2 TB (30ml) maple syrup (optional)
  • 3 cups (525 g) mango chunks

Directions

Puree the coconut milk, maple syrup (if using), and mango in a blender until smooth. Increase speed to the highest setting and whip the mixture for 1 minute. Pour the whipped mango blend into freezer pops, freeze for 6 hours or until solid, and enjoy!

Yield: 8 freeze pops
