Vejibag founder Sally Erickson is a real salad freak. When she moved to Maine she designed and built a solar greenhouse to feed her habit year-round. When harvest time arrived the first winter, she refused to insult her beautiful greens by selling them in plastic bags. Too many fresh vegetables turn to brown slime stored in plastic.
